Winemaking:
Crushing-destemming is followed by spontaneous alcoholic fermentation using indigenous yeasts. It is left in contact with the skins in stainless steel tanks at a controlled temperature, followed by dry racking and cold decantation.
Malolactic fermentation:
Entirely carried out immediately after alcoholic fermentation.
Aging:
Filtration, and bottling. Rests in the bottle at a constant temperature of 14° C (57° F) for one month before release.
Tasting notes:
This wine has great drinkability, a rich fruitiness, and subtle tannins. Its aging highlights the purity of the Nebbiolo grape. Its ideal drinking period is within the first five years after bottling, when it best develops the aromas of rose and small, red fruit. Serve at 16-18° C (61-64° F).
