Winemaking:
Crushing-destemming followed by maceration in contact with skins. Spontaneous alcoholic fermentation in stainless steel tanks at a controlled temperature using indigenous yeasts and in contact with its skins; daily pumpovers. When this process is done, submerged cap maceration is carried out, followed by dry racking, cold decantation, and transfer to barrels.
Malolactic fermentation:
Completely spontaneous malolactic fermentation during the submerged cap maceration.
Aging:
After spending a long time in barrels, it's then assembled and bottled, then rests in the bottle at a constant temperature of 14° C (57° F) for several months before release.
Tasting notes:
With great structure and drinkability, its flavors evolve from mint and violet to raspberry and spices. In the mouth, it is solid and persistent. Able to withstand time, this wine pairs well with important dishes. Serve at 18° C (64° F) after bringing the bottle to room temperature 24 hours before drinking.
