Winemaking:
Crushing-destemming is followed by spontaneous alcoholic fermentation using indigenous yeasts. It is left in contact with the skins in stainless steel tanks at a controlled temperature. Next follows racking and cold decantation with transfer to stainless steel tanks. It is stabilized with cold temperatures in order to avoid the use of clarifying products at the end of the process.
Malolactic fermentation:
Carried out entirely in stainless steel immediately after alcoholic fermentation.
Aging:
In stainless steel tanks for a few months until bottling. Then, bottle rest at a constant temperature of 14°C (57° F) for one month before release.
Tasting notes:
Aromas of fresh fruit that range from blackberry to cherry. On the palate, it is pleasant and tasty with a good acidity; it displays considerable youth. An everyday wine, easy to pair with food, the San Luigi is perfect with appetizers and cheese. It is best drunk in the first five years after bottling. Serve at a temperature between 16-18°C (61-64° F).
